The wort has been been chilled and transferred to the primary fermenter. The yeast has been pitched. Initial gravity 1.070. I made it up to nearly 6 gallons because of expected losses (cherries) at racking.

There was a messy boil-over at the start of the boil, but otherwise the process went OK.

Winter is really here and I am brewing another cherry stout. This will be similar to the some I did in January, but a little stronger. Continue reading →
